After watching the Tailors HAM video I could not make up my mind on which filler to use saw dust vs. fabric trimmings, so I took the opportunity to visit a retail location to see what the end product would look/feel like. They felt completely different. The saw dust filled was very solid, dense and held its shape well. While the HAM with fabric trimmings was lighter, compact and had more of a give to it with added pressure.
I have sourced both saw dust and fabric trimmings to begin the project. In short, taking all options away if you are selecting the perfect HAM it would be filled with ______ (?)

Reza, The hams you use for yourself look a lot larger than the templates you gave us. I realize you said for us to decide the size we want for ourselves. However can you tell us:
1) the approximate length/width of the 'round' and 'oval' hams you're using for yourself? 2) why you think the smaller templates you provided us are still very usable?
